Chef Nic’s obsession of food began at the early age of 14. He completed his apprenticeship with various venues in the Yarra Valley, including The Switch Lifestyle Group, Local Pubs, Stables at Stones, The Barn and the Boutique Guesthouse Meletos.
Having acquired the fundamentals of his apprenticeship, Nic believed it was time to further his career and move his life to the UK. Nic achieved a position with London’s Kitchen W8, a renowned London venue which has held a Michelin star for over a decade. Here, Executive Chef Mark Kempson influenced Nic’s philosophy, preaching flavor, reinforcing his obsession for food. Nic further developed his ability in world renowned venues such as; The Greenhouse, Le Gavroche, Elystan Street and The Fat Duck.
Returning from London, Chef Nic was naturally drawn back to the Yarra Valley for its ethical and sustainable practices. The Stables at Stones was a canvas for which Nic could showcase the Yarra Valley through monthly seasonal menu’s for two years.
Chef Tales is the manifestation of a sheer obsession for food, where nourishment of the mind, body and soul is realised. Chef Tales brings to life the incredible flavours of the Yarra Valley, where we celebrate and acknowledge our farmers, fisherman, pasturers and dairies by name.
